Once Around the "BLOCK" Please!

Here I am sitting at the kitchen table and Barbara, I think you have given me "WRITER'S BLOCK".  Since you made the comment about wanting to follow a blog after you saw the movie Julie and Julia, I have felt under pressure to ACTUALLY write something clever!  ME, something clever!  Well, since I am anything but clever, and since my blog is titled "Kathy in the Kitchen", I decided to, of all things, write out a RECIPE.     TA DA!!!!!!     


This is an original recipe that Mike's mother made up many, many years ago when she threw everything in one pot and made it dinner (before actual casseroles).  There was no name for it so I named it after a European lady that my friend Linda in Knoxville used to talk about.  She lived close to Linda and made a dish she called "Chicken N De Pot". (You have to give it a European accent when you say it.  It sounds more exiting.)  So.... here is CHICKEN IN THE POT.


SERVING 6-8 PEOPLE:


5-6 chicken breasts or 1 cut up chicken without skin
2 vidalia onions
3 medium potatoes
1 pack frozen corn
2 cans early peas
2 cans cream of mushroom soup
2 cans water


Preheat oven to 425.  In 2-3 in. deep casserole dish, layer chicken, sliced potatoes, sliced onions, corn, peas.  Mix mushroom soup with water until mostly dissolved.  Pour over top of mixture.  Cook for 1 hr. covered with top or aluminum foil.  Cook for additional 1/2 hr. uncovered.   Let set for at least 10 minutes before serving. (If the dish is too dry, add water, you don't want it to be too soupy but you do want it to be moist, gravy-like.) 


The above is yummy with Sister Shubert biscuits or rolls.  


Now this is probably the last recipe you will receive. Well... unless I am TOTALLY inspired by some REALLY fantastic recipe I either eat, see or you as a reader send me.  So here I am, sitting at the kitchen table, waiting to be inspired.


Oh, by the way, Mike is preaching at a church near Ocala this weekend and then spending the rest of the week with his long-time prayer partners in Tallahassee for his annual prayer retreat.  If any of you know Mike, you remember his prayer partners and know that they have met every year since they were together in Seminary. So please pray for him this week as he seeks direction from the Lord for our lives as we get ready to move to Florida and start a whole new chapter in our lives - AGAIN.    I am going from Ocala on to Sarasota to stay with my kids and grandkids.  I will be in, as they say in the south "HOG HEAVEN", basking in the glory of the love and fun of those beautiful grandbabies.  Don't you envy me!  Maybe I'll send you a picture or two.      Kathy in the Kitchen

Hey Kathy...coming back to Florida? what's the destination? Ocala? Beautiful country, might remind you a little of AL just without so many hills LOL! Oh and I do envy you, having 5 grandbabies of my own. All 2 1/2 hours away. When Gavin talks to me on the phone and says "Grandma, do you want to come to my house, pleeeease" Makes me want to just get in the car and go! Enjoy those babies and do post pictures.

Sorry I gave you writers block, but glad you decided to post a recipe. It sounds delicious, and I'm always looking for a new dish! I'll be praying for both you and Mike. Wish I could be with Mike in Tallahassee. My husband graduated from FSU, and turned me into a big fan.
By the way, I thought I got up early in the morning, but I see that you posted this blog at 4:14 AM. You really are an early bird! Maybe you should blog about that - LOL
